Leftovers? We prefer to call them Christmas encores. The feast doesn’t end on the 25th – with a little imagination, what’s left can be turned into dishes just as good (sometimes even better!) than the main event. Here are a few ideas to keep the celebrations going…
HAM, EGG + CHIPS
The ultimate Boxing Day comfort plate. You’ll need:
- Leftover ham (slices)
- Veg from the big day
- Bread sauce (yes, it works)
- Chips
- Fried egg (or pineapple)
- You don’t need a recipe for this, cut yourself a thick slice of ham. Cook some chips (obviously homemade are preferred), warm through your leftover bread sauce and veg, and fry an egg or slice of tinned pineapple. Delicious.
PEKING TURKEY PANCAKES
A fun twist on the takeaway classic. You’ll need
- Leftover turkey (shredded, or other poultry)
- Chinese pancakes
- Hoisin sauce
- Cucumber + Spring Onion
- Chinese 5 Spice
- Simply shred the meat from your left over bird and warm it through in a pan with a little Chinese 5 Spice, I like it nice and crispy. You can buy Hoisin Sauce from Lishman’s or any good supermarket, along with Chinese pancakes. However, the pancakes are so easy to make and here’s a recipe explaining how
FESTIVE PIE
Nothing beats a pie with buttery pastry, mash + greens. You’ll need:
- Leftover ham (diced)
- Leftover turkey (diced
- Leftover stuffing
- Puff or shortcrust pastry
- Gravy

TARTIFLETTE
An Alpine classic – rich and cheesy. You’ll need:
- Leftover ham (diced)
- Potatoes (sliced)
- Onion
- Cream
- Leftover cheese
I really like Felicity Cloake’s Tartiflette as it has white wine in too. Switch the bacon for diced ham, and replace the Reblochon with your leftover cheese.
