We’ve had our HQ on Leeds Road since the 1980s; although we’ve grown and developed a fair bit over the years. Our Ilkley base is home to a wonderful team of master butchers, bakers and charcutiers who are passionate about creating the very best produce around.
From a strong farming family, David Lishman embarked on a career in butchery with a single shop in 1986. That same location is the heart of our little empire and David runs the business alongside his daughter Emma.
We gave our shop a complete overhaul in Spring 2022 to put our customers closer to our craft and create an open, welcoming place for people who adore their food. We love being part of the Ilkley scene and are immensely proud of our farming heritage.
We respect the farmers we work with, and always go above and beyond to champion the heritage breeds and lesser-known delicacies: Hereford and Short Horn Beef, Salt Marsh Lamb, outdoor bred Yorkshire Pork and much more besides.
Our integrity remains at the heart of everything we do. Provenance is paramount: we know that every single element of welfare, sustainability and butchery is key to getting the very best.
We’ve done pretty well in competitions over the years and have numerous Great Taste Awards under our belts, as well as the title of ‘Britain’s Best Butcher’s Shop 2017’. We have received accolades locally, regionally and nationally for our produce; much of which we courier all over the UK. For the last few years, David Lishman and his daughter Emma have shared the helm. Together they drive the family business and champion their remarkable team of craftspeople.
Joe Smith started his career at Lishman’s as an Apprentice, and is now a Partner in the business, together with Andrew Waterhouse, our Master Charcutier from Zimbabwe. Joe often appears on our social media channels and is the life and soul of our in-store butchery demos, whilst Andrew is our charcuterie guru who knows everything there is to know about the science and art of the perfect cure.
Comprising Master Butchers, Charcutiers, Bakers, Apprentices and everything in between; the Lishman’s team are a happy crew of people who feel that life’s too short for bland meals. Even with something as simple as a Sausage Roll, we firmly believe that you feel more fulfilled when you give your body the good stuff and eat wholesome food, prepared with love and care.
