LISHMAN'S HAM

These hams are cured to a recipe originally shown to my Grandfather George Gordon Lishman, on his Yorkshire Dales farm, by a prisoner of War from Germany, Enrik Blam. The recipes have been adapted over the years to accommodate changing tastes, but this still creates a splendid flavoursome ham from high welfare pigs, and a wonderful centre piece to any celebratory dinner table.
